Method
Cocktail
- 1
Chill glass (optional)
If you prefer a colder drink with less dilution, place your rocks glass in the freezer for 5–10 minutes or fill it with ice water while you prepare the cocktail.
- 2
Combine spirits
Add 2 oz cognac and 1 oz dry vermouth to a large mixing glass filled with the measured ice. Using good quality cognac will emphasize the drink's character; adjust the cognac:vermouth ratio slightly if you prefer it drier (more cognac) or softer (more vermouth).
- 3
Stir and chill
Stir the mixture with a bar spoon for 20–30 seconds (about 15–20 full turns) until well chilled and slightly diluted. Stirring rather than shaking preserves clarity and the cognac's silky texture.
- 4
Prepare glass and strain
Discard any ice or water from the chilled rocks glass if you pre-chilled it. Using a strainer, pour the mixed cocktail from the mixing glass into the rocks glass over one large ice cube or a few fresh ice cubes, depending on preference.
- 5
Garnish and serve
Express an orange peel over the drink by holding it skin-side down above the glass and giving it a quick twist to spray the oils onto the surface. Rub the peel on the rim if desired, then drop it into the drink. Serve immediately.
