Chill glass
Place a Champagne flute or coupe in the refrigerator or freezer for 5–10 minutes while you prepare the cocktail, or fill it with ice water to chill and discard before serving.

Combine base ingredients
In a cocktail shaker, add the gin, fresh lemon juice and simple syrup. Fill the shaker about halfway with ice (roughly 1 cup) so the liquid chills and dilutes correctly.

Shake
Secure the shaker and shake vigorously for 10–12 seconds until the outside of the shaker is very cold and condensation forms. This chills and slightly dilutes the mixture.

Strain
Strain the shaken mixture into the chilled Champagne flute or coupe, using a fine strainer if you prefer to catch small ice shards and pulp.

Top with sparkling wine
Carefully top the strained mixture with about 3 oz of chilled Champagne or other dry sparkling wine. Pour slowly to preserve bubbles and avoid overflow.

Garnish and serve
Twist a strip of lemon peel over the drink to express oils, rub it on the rim if you like, then drop it into the flute as a garnish. Serve immediately.
