Prepare drink base
In a heatproof mixing cup or small bowl, combine the unsalted butter, brown sugar, ground cinnamon, ground nutmeg, ground cloves and a pinch of sea salt. Use a small whisk or spoon to mash and blend until the mixture is a smooth, paste-like consistency with no large lumps (about 30–45 seconds).
Warm and dissolve spices
Add the vanilla extract to the butter-sugar-spice paste and stir to incorporate. Pour in 1 ounce (30 ml) of the hot water and stir vigorously until the sugar begins to dissolve and the mixture becomes syrupy (about 15–20 seconds). This helps dissolve the sugar and bloom the spices.
Assemble the cocktail
Place the buttered spice mixture into a warmed mug. Add the 2 oz dark rum. Pour the remaining hot water (approximately 5 oz / 150 ml) into the mug while stirring gently to fully incorporate the butter-sugar-spice paste. Continue stirring for 10–15 seconds until the drink is homogenous and slightly frothy.
Finish and garnish
Top the drink with an optional dollop of whipped cream if using. Grate a small pinch of fresh nutmeg over the top as a garnish. Serve immediately while hot.
Notes
Adjust sweetness by increasing or decreasing brown sugar to taste. For a richer version, use browned butter or increase butter to 1.5 tbsp. For a spicier profile, add more freshly grated nutmeg or a cinnamon stick when heating the water (remove before serving).
