Cocktail

Method

Cocktail

  1. 1

    Chill glass

Place a rocks glass in the freezer or fill it with ice water to chill while you prepare the cocktail (about 5 minutes).

  2. 2

    Combine ingredients

Fill a mixing glass or cocktail shaker with large ice. Add 1 oz gin, 1 oz Campari, 1 oz sweet vermouth, 1/2 oz dark creme de cacao, and 2 dashes chocolate bitters.

  3. 3

    Stir

Stir the mixture gently with a bar spoon for 20–30 seconds (about 20–30 full turns) until well chilled and slightly diluted, aiming for a temperature near 0–4°C (32–39°F).

  4. 4

    Prepare glass

Discard the chilling ice or remove the glass from the freezer. If rimming with sugar, wet a small section of the rim with the orange peel and dip that section lightly into coarse sugar.

  5. 5

    Strain

Place a large ice cube or sphere into the chilled rocks glass. Double-strain the stirred cocktail into the glass over the ice using a julep or Hawthorne strainer (to catch any small chips if present).

  6. 6

    Garnish

Express the orange peel over the drink by holding it with the outer (colored) side down and giving it a firm twist to release oils, then rub the peel briefly along the rim and drop it into the glass.

Optional finishing

  1. 7

    Add chocolate

Sprinkle approximately 1/2 teaspoon of finely grated dark chocolate or chocolate shavings over the top of the drink for a subtle chocolate aroma and visual finish.
