Vin Santo is typically served slightly below room temperature. If the bottle is at cellar temperature (14–16°C / 57–61°F), leave it as is; if warmer, chill in the refrigerator for 20–30 minutes to reach about 12–14°C (53–57°F). If too cold, remove from the fridge 10–15 minutes before serving.

Chill or bring to serving temperature

Hold the bottle upright for a few minutes to let any sediment settle to the bottom. Wipe the neck with the room-temperature water and a clean cloth. Using a corkscrew, gently remove the cork to avoid crumbling. Smell briefly to confirm the wine is clean and aromatic (notes of dried apricot, honey, toasted nuts).

Inspect and open bottle

If the bottle has visible sediment, decant carefully into a small decanter or clean bottle, leaving the last 1–2 cm of liquid behind to avoid pouring sediment. Vin Santo rarely needs long air exposure; decanting only to separate sediment is sufficient.

Use small dessert wine glasses. Pour about 60–90 ml (2–3 fl oz) per serving. Fill no more than one-third of the glass to concentrate aromas.

Pouring

Arrange the broken cantucci pieces on a small plate or in a bowl. If using aged pecorino or parmesan, place thin slices on a separate small plate. These should be ready before serving the wine.

Prepare accompaniments

Offer the Vin Santo to guests with the cantucci alongside. Traditional Tuscan custom is to dip cantucci into the Vin Santo briefly before eating; demonstrate by dipping one end of a biscotti into the wine for 1–2 seconds to soften and release almond flavors. For cheese pairing, place a small bite of pecorino between sips to contrast the wine's sweetness with savory, salty notes.

Tasting order

If the bottle isn’t finished, reseal with the original cork or a wine stopper and store upright in a cool, dark place (or refrigerator) for up to 2–3 weeks. Because of the wine’s high sugar and alcohol (15.5%), it keeps well but will gradually lose aromatics.
