Prepare glass
Select an old-fashioned (rocks) glass and add a few large ice cubes to chill while you mix the drink.
Measure and combine
In a cocktail shaker, add 2 oz Jameson Irish Whiskey, 0.5 oz freshly squeezed lime juice, 0.25 oz simple syrup, and 2 dashes Angostura bitters.
Shake
Fill the shaker with ice (about 3/4 full), secure the lid, and shake vigorously for 10–12 seconds until the shaker is cold to the touch and the liquid is well chilled and slightly diluted.
Strain
Discard the ice in the chilled glass if it has melted significantly. Strain the cocktail from the shaker into the prepared rocks glass over fresh ice (one or two large cubes).
Garnish and serve
Express the oils of a lime wheel or twist over the drink by holding it over the glass and giving it a quick squeeze, then drop the wheel or twist into the drink as a garnish. Serve immediately.
