Build the cocktail
Fill a highball or Collins glass with cubed ice (about 1 cup). Pour 2 oz Gosling's Black Seal (or another dark rum) over the ice, then add 0.5 oz fresh lime juice. If you prefer a slightly sweeter, rounder drink, add 0.25 oz simple syrup.
Top and finish
Top the drink with about 4 oz cold ginger beer. Add 2 dashes of Angostura bitters on the surface — these add aromatic depth and a gentle spiced note that complements the black rum and ginger.
Stir gently
Using a bar spoon, gently stir once or twice to integrate the spirits, lime, and ginger beer without releasing too much carbonation.
Garnish and serve
Garnish with a lime wheel or wedge on the rim. Optionally add a piece of candied ginger or a dehydrated lime wheel for extra aroma. Serve immediately with a straw if desired.
Notes: Gosling's Bermuda Black (Black Seal) is robust and slightly sweet with molasses notes; the ginger beer should be spicy and effervescent.
