Prepare crostini

Preheat oven to 200°C (400°F). Slice the baguette into 12 even slices (about 1 cm thick). Brush both sides lightly with 3 tbs extra-virgin olive oil and place on a baking sheet. Toast in the oven for 6–8 minutes until golden and crisp, flipping once halfway. Remove and while still warm rub each slice with the cut side of 1 garlic clove for a subtle garlic note.

Ricotta spread

In a small bowl, combine 1 cup ricotta with 1 tsp lemon zest and a pinch of salt and black pepper (from pantry). Mix until smooth. Spread a thin layer of ricotta on 6 of the toasted crostini.

Smoked salmon tartine

Top the remaining 6 crostini with thin slices of smoked salmon (about 100 g total) and 1 tbs capers scattered on top. Finish the ricotta crostini with a very small spoonful of smoked salmon or a leftover basil leaf if desired. Arrange on a serving board.

Make the meatball mixture

In a bowl combine 300 g ground pork and beef mix, 0.5 cup finely chopped onion, 1 minced garlic clove, 2 tbs chopped parsley, 3 tbs grated Parmesan, 0.5 cup breadcrumbs, 1 whole egg, 1 tsp salt and 0.5 tsp black pepper. Mix gently until just combined — do not overwork to keep meatballs tender.

Shape and brown

Form the mixture into 18–20 small meatballs (about 20–25 g each). Heat 2 tbs olive oil in a large skillet over medium heat. Brown the meatballs on all sides, turning carefully, about 6–8 minutes total — they will finish cooking in the sauce.

Simmer in tomato

Pour 200 ml tomato passata into the skillet with the browned meatballs. Add 0.5 tsp dried oregano and a pinch of salt. Lower heat to a gentle simmer and cook uncovered for 8–10 minutes until meatballs are cooked through and sauce thickens slightly. Keep warm until serving.

Slice and grill eggplant

Trim and thinly slice 1 large eggplant lengthwise into 8 slices about 4–5 mm thick. Brush both sides lightly with 1 tbs olive oil and season with 0.5 tsp salt and 0.25 tsp black pepper. Grill on a hot grill pan or under the broiler for 2–3 minutes per side until tender and marked. Let cool slightly.

Assemble rolls

Spread about 10–12 g (a teaspoon) of goat cheese or torn fresh mozzarella onto one end of each grilled eggplant slice. Top with 1 basil leaf (use 8 leaves total) and roll up tightly. Secure with toothpicks if needed (12 pieces provided). Arrange seam-side down on a platter and drizzle each roll with a small amount of balsamic reduction (1 tsp total) if using.

Finishing and plating

On a large serving board or three small plates, place the crostini and tartine in one area, the meatball bites with a spoon of warmed tomato sauce in another, and the eggplant rolls grouped together. Scatter 1 cup microgreens or mixed salad leaves between the sections and tuck lemon wedges around the board for brightness.

Provide small forks or toothpicks for guests. Keep the meatballs warm just before serving. The selection yields three distinct aperitivo bites to taste — savory crostini/tartine, warm Mediterranean meatballs, and cool creamy eggplant rolls.
