Prepare serving bed
Fill a small chilled serving dish or plate with crushed ice to create a stable, cold bed for the oyster shell.
Shuck and chill oyster
Carefully shuck the Gillardeau oyster: hold shell with a towel, insert oyster knife at hinge, twist to open, cut the muscle to free the top shell and discard. Retain the oyster liquor in the bottom shell. Rinse any shell fragments under cold water and place the bottom shell with the oyster on the crushed-ice bed to keep it cold and level.
Finish with caviar
Using a small spoon (preferably mother-of-pearl or bone to avoid metallic taste), place about 10 g of Cru Special Reserve caviar on top of the oyster, slightly off-center so the oyster liquor remains available. Add a tiny drop (about 1 tsp) of freshly squeezed lemon juice if desired, or spoon a small amount of the optional shallot mignonette beside the oyster rather than over it. Sprinkle a light pinch of snipped chives if using.

If you prefer a mignonette: mix the minced shallot, red wine vinegar, a pinch of black pepper, and 1 tsp lemon juice. Spoon a few drops beside the oyster for guests to use sparingly — do not overwhelm the caviar.
Champagne
Chill the Champagne to 6–8°C. Pour one well-chilled glass just before serving. Encourage guests to sip between bites to cleanse the palate and accentuate the briny, buttery notes of the oyster and caviar.
Blini
Make batter
In a bowl, whisk together the all-purpose flour, buckwheat flour, baking powder and salt. In a separate bowl, beat the egg into the warm milk. Combine wet into dry and whisk until smooth. Let batter sit 10 minutes to hydrate.
Cook blini
Heat a nonstick skillet over medium-low heat and brush with a little butter. Spoon small rounds (about 1 tablespoon batter) into the pan to make blini roughly 4–5 cm in diameter. Cook until small bubbles form and edges set (about 1–1.5 minutes), flip and cook 30–45 seconds more until lightly golden. Transfer to a warm plate and keep covered. Yield ~10–12 small blini.
Service suggestion
Place a blini on the side of the oyster plate or serve on a small board. Offer a small dab of caviar on a blini for guests who prefer a bite rather than eating the oyster whole.
Chips Armatore aromatizzate alle alici di Cetara
Prepare anchovy seasoning
In a small bowl, mash the finely chopped Cetara anchovy with the olive oil and lemon zest until a paste forms. Taste and adjust — it should be salty and aromatic but not overwhelming.
Season chips
Lightly brush or very gently dot each potato chip with a small amount of the anchovy paste (about 1/8 tsp per chip). Arrange chips in a single layer on a small plate and finish with a light pinch of freshly ground black pepper. Do not over-saturate the chips — keep them crisp.
Serve
Serve the flavored chips alongside the oyster on the same plate or on a small separate dish. They provide a crisp, umami contrast to the briny oyster and creamy caviar.
Garnishes & Service
Arrange the chilled oyster with caviar on the crushed-ice bed. Add 10–12 blini to the plate or board and the 12 seasoned chips. Garnish sparingly with snipped chives and a few microgreens if using. Present the glass of chilled Champagne alongside. Provide a small mother-of-pearl spoon for the caviar and a napkin.
