Chill glass

Place a coupe or rocks glass in the freezer or fill with ice water to chill while you prepare the cocktail.

Combine ingredients

Into a cocktail shaker add 2 oz Clase Azul Reposado, 0.75 oz fresh lime juice, 0.5 oz agave nectar, 0.5 oz orange liqueur, and 2 dashes orange bitters.

Add ice and shake

Fill the shaker with ice (enough to come about 3/4 full; about 1 cup). Secure the lid and shake vigorously for 12–15 seconds, until the shaker is cold and exterior becomes frosty.

Prepare glass

If you chilled the glass in the freezer, remove it. If you used ice water to chill, discard the ice water and dry the glass.

Strain

Double strain the cocktail into the chilled coupe or over one large ice cube in a rocks glass using a Hawthorne strainer and a fine mesh strainer to remove small ice shards and pulp.

Finish

Express an orange peel over the top of the drink by holding the peel skin-side down about 6 inches above the glass and giving it a quick squeeze to release oils. Optionally flame the peel briefly over the glass for a smoky, caramelized citrus aroma, then drop the peel into the drink or discard.

Garnish

Garnish with a lime wheel on the rim or float a lime twist on the surface. If you flamed the orange peel, you can rest it on the rim or float it as well.
