Preparation
Chill glass
Place a rocks glass or coupe in the freezer for a few minutes, or fill it with ice water while you prepare the cocktail to chill it.
Muddle mint (optional for aroma)
In a shaker, gently clap the mint between your hands to release oils, then add to the shaker and lightly muddle once or twice. Do not over-muddle — you want aroma, not bitterness.
Combine ingredients
Add 2 oz clairin, 0.75 oz fresh lime juice, 0.5 oz simple syrup, 0.25 oz orange curaçao, and 2 dashes Angostura bitters into the shaker with the muddled mint.
Dry shake (optional)
If you prefer a brighter mint aroma, dry shake (shake without ice) for about 10 seconds to better integrate the mint oils.
Wet shake
Add a large handful of ice to the shaker. Shake vigorously for 12–15 seconds until well chilled and slightly frosty on the outside of the shaker.
Double strain and pour
Using a Hawthorne strainer and a fine mesh strainer, double-strain the cocktail into the prepared glass to remove small mint fragments and ice shards. If serving on the rocks, pour over the crushed ice.
Garnish and finish
Express a lime wheel over the drink to release oils, rub it on the rim if desired, and drop it in or balance it on the rim. Slap and tuck a fresh mint sprig into the drink for aroma. Optionally add one additional dash of Angostura on top.
