Chill glass

Place an old-fashioned glass or rocks glass in the freezer for 5–10 minutes, or fill it with ice water while you prepare the drink to chill it.

Combine ingredients

In a mixing glass or cocktail shaker, add 2 oz Caol Ila single malt Scotch, 0.25 oz simple syrup, 0.5 oz fresh lemon juice, 0.25 oz dry vermouth, and 2 dashes of Angostura bitters.

Stir and chill

Fill the mixing glass with plenty of ice, then stir gently for 20–30 seconds (about 15–20 full strokes) until the mixture is well chilled and slightly diluted.

Prepare serving glass

If you chilled your serving glass with ice water, dump the water and add a large ice cube (or a few large cubes). If it was in the freezer, just add a large ice cube.

Strain and garnish

Strain the chilled cocktail into the prepared glass over the large ice cube. Express a lemon twist over the drink by holding the twist skin-side down above the glass and giving it a sharp pinch to release oils, then drop the twist into the drink as garnish.

Serve

Serve immediately. Sip slowly to appreciate the smoky/peaty character of the Caol Ila balanced with citrus, a hint of sweetness, and vermouth complexity.
