Measure and combine

Add 1.5 oz aged rum, 1 oz medium-bodied amaro, 0.5 oz sweet vermouth, 0.25 oz aperitivo or orange liqueur, 0.5 oz fresh lemon juice, 0.25 oz simple syrup, and 2 dashes of Angostura bitters into a cocktail shaker.

Add ice and shake

Fill the shaker with plenty of ice (enough to chill thoroughly). Secure the lid and shake vigorously for 12–15 seconds until the outside of the shaker is cold and slightly frosted.

Prepare glass

If serving on the rocks: fill a short rocks glass with large ice. If serving up: chill a coupe or Nick & Nora glass in the freezer or by filling with ice water and discarding before straining.

Strain

Double-strain the cocktail into the prepared glass (over fresh ice if serving on the rocks, or neat into the chilled coupe). Use a Hawthorne and a fine mesh strainer if available to remove small ice shards and pulp.

Finish

Express the oils from one large citrus twist (orange or grapefruit) over the surface of the drink by holding it over the glass and pinching so oils spray onto the cocktail. Rub the twist briefly on the rim, then drop it into the drink as garnish.
