Combine and simmer
Place pineapple chunks, water and sugar in a small saucepan. Bring to a low simmer over medium-low heat and cook gently for 8–10 minutes, mashing pineapple with a spoon to release juices and dissolve sugar.
Strain and cool
Remove from heat, strain through a fine mesh sieve into a clean jar, pressing to extract as much liquid as possible. Discard solids. Let syrup cool to room temperature.
Smoke or finish
Stir in 1 teaspoon of mezcal or capture a short burst of wood smoke into the jar and close lid to infuse for a minute — this adds a subtle smoky-pineapple note. Refrigerate until use. Yields ~6 ounces.
Cocktail Assembly
Chill glass
If desired, chill an Old Fashioned glass in the freezer for 5–10 minutes, or fill with ice water while you prepare the cocktail.
Measure and combine
In a cocktail shaker, add 2 oz Alipús Artesanal Joven mezcal, 0.75 oz fresh lime juice, 0.5 oz agave nectar (or simple syrup), 0.5 oz orange liqueur, 0.25 oz smoked pineapple syrup (if using), and 2 dashes bitters.
Add ice and shake
Fill the shaker with ice (about 1 cup). Shake vigorously for 12–15 seconds until the shaker is well chilled and slightly frosted.
Prepare serving glass
Discard ice water from the chilled Old Fashioned glass if used. Add a single large ice cube or clear ice to the glass.
Double strain and serve
Double-strain the cocktail from the shaker into the serving glass over the large ice cube to remove any small ice shards and pulp.
Garnish
Express an orange peel over the drink to release oils and, if using, briefly flame it over the glass to add aroma (hold a lit match or lighter near the peel while squeezing). Drop the peel on top of the drink or rest a lime wheel on the rim.
Serve immediately and sip slowly to appreciate the vegetal-mezcal smokiness balanced with bright citrus, sweet orange liqueur and the optional smoky pineapple note.
