Omelet Preparation
Whisk the eggs
In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined and slightly frothy.
Cook the omelet
Heat olive oil in a non-stick skillet over medium heat. Pour the egg mixture into the skillet and cook for about 2-3 minutes until the edges start to set.
Filling Addition
Add the filling
Once the omelet is partially cooked, add the diced turkey, diced avocado, and shredded cheddar cheese onto one half of the omelet.
Fold the omelet
Carefully fold the other half of the omelet over the filling. Cook for another 2-3 minutes until the cheese is melted and the omelet is cooked through.
Cheese Sauce Preparation
Make the roux
In a small saucepan, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute, stirring constantly.
Add milk and cheese
Slowly whisk in the milk, continuing to stir until the mixture thickens. Add the shredded cheddar cheese and stir until melted and smooth. Season with salt and pepper to taste.
Serving
Serve the omelet
Place the omelet on a plate and drizzle the creamy cheese sauce over the top. Enjoy your California omelet while hot!
