Jollof Rice
Method
Cooking Jollof Rice
Add Tomatoes
Add the bell pepper, tomato paste, and canned tomatoes to the pot. Stir well and let it simmer for about 10 minutes, allowing the flavors to meld.
Combine Rice and Stock
Add the washed rice to the pot, followed by the chicken or vegetable stock, bay leaves, thyme, salt, and black pepper. Stir to combine.
Cook Rice
Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it cook for about 20-25 minutes, or until the rice is tender and the liquid has absorbed.
Fluff and Serve
Once cooked, fluff the rice with a fork, remove the bay leaves, and serve hot.
