Ewa Agoyin Beans

Method

Cooking Instructions

1

Prepare the Beans

Soak the black-eyed peas overnight or for at least 6 hours. Drain and rinse. In a pot, combine the soaked beans, water, chopped onion, and salt. Cook on medium heat until the beans are soft, about 45 minutes to 1 hour.

2

Make the Spicy Pepper Sauce

In a blender, combine the red bell peppers, scotch bonnet peppers, garlic, and onion. Blend until smooth. In a saucepan, heat vegetable oil over medium heat. Pour in the blended mixture, add salt, and cook for 10-15 minutes until the sauce thickens.

3

Cook the Meat

In a separate pot, add meat, spices, salt, and water. Bring to a boil, then reduce heat and simmer until the meat is tender, about 30-40 minutes. You can add more water if needed.

4

Fry the Plantains

Peel and slice ripe plantains diagonally. Heat vegetable oil in a frying pan over medium heat. Fry the plantain slices until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.

5

Serve

In a bowl, serve the Ewa Agoyin beans topped with spicy pepper sauce, alongside the cooked meat and fried plantains.
