Cooking Steps
Prepare the Beans
Rinse the black beans under cold water. Soak them overnight or use canned beans for a quicker option. If using dried beans, cook in a pot with 4 cups of water until tender.
Cook the Sausage
In a large skillet, heat the olive oil over medium heat. Add the chorizo sausage and cook until browned and crispy, about 5-7 minutes. Remove from the skillet and set aside.
Make the Spicy Pepper Sauce
In the same skillet, add diced onion, minced garlic, red bell pepper, and jalapeño. Sauté until soft, about 5 minutes. Add the cooked black beans and season with salt and black pepper. Mix well and simmer for 10 minutes.
Fry the Plantains
Peel and slice the ripe plantains. In another skillet, heat oil over medium heat and fry the plantain slices until golden brown on both sides, about 3-4 minutes per side.
Combine and Serve
Once everything is cooked, serve the spicy beans topped with the chorizo and fresh cilantro, alongside the fried plantains.
