    Prepare the Gelatin

    In a small bowl, combine the gelatin powder and cold water. Let it sit for about 5-10 minutes until it blooms.

    Heat the Cream Mixture

    In a saucepan, combine the heavy cream, whole milk, and granulated sugar. Cook over medium heat, stirring occasionally, until the mixture is hot but not boiling.

    Add Vanilla and Gelatin

    Remove the saucepan from heat. Stir in the vanilla bean or extract. Add the bloomed gelatin mixture and stir until completely dissolved.

    Pour into Molds

    Pour the panna cotta mixture into individual molds or cups. Allow them to cool at room temperature for about 30 minutes.

    Chill

    Cover the molds with plastic wrap and refrigerate for at least 4 hours or until set.

Seasonal Fruit Compote

    Prepare the Fruit

    Chop the mixed seasonal fruits into bite-sized pieces if necessary.

    Cook the Compote

    In a saucepan, combine the chopped fruits, granulated sugar, lemon juice, and water. Cook over medium heat, stirring occasionally until the mixture starts to bubble and the fruits soften, about 10-15 minutes.

    Cool the Compote

    Remove from heat and let the compote cool to room temperature. It can be served warm or chilled.
