Prepare the Lemon Juice
Wash the lemons thoroughly. Cut them in half and juice them to extract fresh lemon juice. You should have about 1 cup of lemon juice.
Make the Sugar Syrup
In a saucepan, combine 1 cup of granulated sugar with 2 cups of water. Heat the mixture over medium heat, stirring occasionally until the sugar is completely dissolved. This should take about 5 minutes. Once dissolved, remove from heat and let it cool.
Combine Ingredients
In a large bowl, combine the freshly squeezed lemon juice, the cooled sugar syrup, and a pinch of salt. Stir well to combine all ingredients.
Chill the Mixture
Cover the bowl with plastic wrap or a lid and refrigerate the mixture for at least 2 hours, or until it is very cold.
Freeze the Lemon Ice
After chilling, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a slushy consistency. If you do not have an ice cream maker, pour the mixture into a shallow dish and place it in the freezer.
Scrape and Serve
If using the shallow dish method, after 1 hour, use a fork to scrape the mixture to break up any ice crystals, then return it to the freezer. Repeat this every 30 minutes for about 2-3 hours, until the lemon ice is fully set. Serve in bowls and garnish with fresh mint leaves.
