Prep & Build

Chill glass

Place a highball or Collins glass in the freezer for 5–10 minutes or fill with ice water while you prepare ingredients to ensure the drink stays cold.

Combine base ingredients

In a cocktail shaker (or mixing glass) add the butterfly pea blossom non-alcoholic spirit (2 tbs), fresh grapefruit juice (60 ml), fresh lime juice (15 ml), and simple syrup (15 ml).

Add ice and shake

Fill the shaker with ice (enough to nearly fill) and shake vigorously for 10–12 seconds until well chilled and slightly diluted.

Assemble & Serve

Strain into glass

Discard ice or water from the chilled glass and fill it with fresh cubed ice (about 1 cup). Double-strain the shaken mixture over the fresh ice into the glass to remove any pulp and small ice chips.

Top with tonic

Slowly pour chilled Fever-Tree tonic water (120 ml) down the side of the glass so it layers and preserves some effervescence. Pour gently to avoid flattening the tonic.

Final color & stir

Watch the butterfly pea botanical create an indigo-to-azure hue that may shift slightly with the grapefruit acidity. If you prefer an even color, gently stir once with a bar spoon (1–2 slow turns); stirring more will blend and reduce layering.

Garnish

Float a thin grapefruit wheel or segment on top, add an edible butterfly pea blossom or small edible flower, and optionally a mint sprig for aroma. Serve with a straw if desired.
