General preparation
Heat water to appropriate temperature
Fill kettle with fresh filtered water. Heat to the recommended temperature for the chosen tea: Green Jasmine 175–185°F (80–85°C); Fresh Mint and Chamomile 190–200°F (88–93°C); Earl Grey and English Breakfast 200–212°F (95–100°C). If you don't have a thermometer, bring to a boil then let sit 1–2 minutes for green jasmine, or use just-boiled water for black teas and herbal.
Brewing each tea (per 1 cup)
Green Jasmine
Place 1 tsp green jasmine tea in an infuser or teapot. Pour 1 cup (240 ml) water at 175–185°F (80–85°C) over leaves. Steep 2–3 minutes. Taste at 2 minutes, remove leaves when the aroma and flavor are delicate but present. Do not over-steep to avoid bitterness. Serve plain or with a light drizzle of honey if desired.
Fresh Mint
In a mug or teapot, bruise 4–6 fresh mint leaves lightly between your fingers to release oils and add them to the vessel. Pour 1 cup (240 ml) water at 190–200°F (88–93°C) over the leaves. Steep 5–7 minutes for a bright, minty infusion. For a stronger brew, muddle leaves and steep up to 10 minutes. Remove leaves and serve hot or iced.
Earl Grey
Place 1 tsp Earl Grey tea in an infuser or teapot. Pour 1 cup (240 ml) water at 200–212°F (95–100°C) over the leaves. Steep 3–5 minutes depending on desired strength (3 minutes for lighter, 5 for stronger). Remove leaves. Serve with a slice of lemon or 1–2 tbs milk and sugar/honey to taste.
Serving & finishing
Remove infusers or strain loose leaves promptly at end of steep time to avoid over-extraction and bitterness.
Clean equipment after use: discard used leaves/bags, rinse infusers and teapot, and allow to dry.
