Spiced Maple & Ginger Cordial
Combine the chopped fresh ginger and 1 cup water in a small saucepan.
Bring to a gentle simmer over medium heat, then reduce heat and simmer for 10 minutes to extract ginger flavor.
Add the maple syrup, light brown sugar (if using), whole cloves and ground cinnamon to the saucepan. Stir to combine and continue to simmer gently for 5 more minutes.
Remove from heat and let the mixture steep for 15–20 minutes to deepen the spice infusion.
Strain the cordial through a fine mesh sieve or cheesecloth into a clean jar, pressing on solids to extract liquid. Discard solids.
Stir in 1 teaspoon fresh lemon juice to brighten and preserve the cordial. Cool to room temperature, then refrigerate. Yields about 1 cup cordial; keeps refrigerated for up to 2 weeks.
Cocktail
Fill a highball or mule mug with ice.
Measure and pour 2 oz Canadian Club whisky and 0.75 oz chilled spiced maple & ginger cordial over the ice.
Add 0.5 oz fresh lime juice and 2 dashes Angostura bitters.
Top with about 4 oz chilled ginger beer. Gently stir once or twice to combine—avoid over-stirring to keep carbonation.
Garnish with a lime wheel or wedge and a piece of crystallized ginger if desired.
Serve immediately. For a slightly warmer, spicier profile, swap half the ginger beer for ginger ale or use a stronger ginger beer.
