mix and form

Place ground chuck in a bowl. Add kosher salt, 1 tsp black pepper and 1 tablespoon Worcestershire sauce. Gently combine with your hands or a spatula just until evenly mixed — avoid overworking to keep patties tender. Divide meat into four equal portions (about 4 oz each) and loosely shape into 3/4-inch thick patties slightly wider than the buns. Make a shallow 1/2-inch dimple in the center of each patty to reduce puffing during cooking.

preheat cooking surface

Heat a cast-iron skillet, griddle, or heavy sauté pan over medium-high heat for 3–5 minutes until very hot. Brush the cooking surface lightly with the vegetable oil.

cook patties

Place patties on the hot surface leaving space between them. Cook undisturbed for 3 minutes to develop a crust. Flip once and cook for another 2 minutes for medium (adjust ±1 minute for desired doneness). During the last 45–60 seconds of cooking, top two patties with a slice of smoked cheddar and the other two with an American cheese slice (or stack both if you want double cheese). Cover pan briefly with a lid or tent with foil to melt cheese quickly.

While patties cook, heat a separate skillet over medium heat. Lay bacon strips in a single layer and cook until crisp, turning occasionally, about 6–8 minutes. Transfer cooked bacon to paper towels to drain.

Thinly slice the red onion into rings and separate into individual slices. Slice the tomato into four even round slices. Rinse and dry butter lettuce leaves. Have pickle slices ready.

Sauce

In a small bowl, whisk together mayonnaise, ketchup, Dijon mustard, sweet pickle relish, apple cider vinegar, smoked paprika and 1/8 tsp black pepper until smooth. Taste and adjust seasoning. Refrigerate until ready to assemble.

Buns & Finish

Split brioche buns and spread softened butter on cut sides. Place cut sides down on the hot griddle or skillet for 30–60 seconds until golden and toasted. Remove from heat.

Spread about 1 tablespoon of the prepared sauce on the bottom half of each toasted bun. Place a lettuce leaf, then a cheese-topped patty. Top each patty with 1–2 bacon slices (arrange for even coverage), a tomato slice, a few rings of red onion, and two pickle slices. Spread a thin layer of sauce on the top bun and cap the burger. Press gently to compact.

Serve immediately while hot. Provide extra sauce and pickles on the side if desired.
