Parq Sauce (special sauce)
Method
Parq Sauce (special sauce)
Make the sauce
In a small bowl combine mayonnaise, ketchup, Dijon mustard, sweet pickle relish, hot sauce, granulated garlic, lemon juice, and salt. Whisk until smooth and well combined. Taste and adjust seasoning (add a bit more hot sauce or lemon if desired). Refrigerate while you prepare the rest of the burger so flavors meld (at least 10 minutes).
Burger Patties
Form and season patties
Divide the ground chuck into two equal portions (about 8 oz each). Lightly form each portion into a loose ball, then press into a patty about 3/4 inch thick and slightly wider than your bun (they will shrink while cooking). Avoid overworking the meat. Season both sides evenly with salt and freshly ground black pepper and brush one side with the Worcestershire sauce.
Cook the patties
Heat a heavy skillet or griddle over medium-high heat until smoking just begins. Add the vegetable oil and spread to coat. Place the patties salt/pepper side down first (seasoned side up). Cook undisturbed for 3 to 4 minutes to develop a deep brown crust. Flip the patties and immediately place a slice of American cheese on each. Cook another 2 to 3 minutes for medium doneness (internal temperature ~155°F/68°C). If you prefer, cover the pan for 30–60 seconds to help cheese melt. Remove patties to a rested plate for 2 minutes.
Buns & Toppings
Prepare toppings
While the patties cook, thinly slice the red onion and tomato if not already done. Wash and dry lettuce leaves. Keep pickle slices ready.
Assemble the Parq Cheeseburger
Spread about 1 tablespoon of the Parq sauce on the bottom half of each toasted bun. Place a lettuce leaf, then the cheeseburger patty with melted American cheese. Top each patty with two tomato slices, a few rings of red onion, and 3 pickle slices. Spoon another tablespoon of Parq sauce on the inside of the top bun and place on the burger. Press gently to compress and serve immediately.
