King Crab and Seasoning
Serving Accompaniments
Method
Preparation
If crab legs are frozen, thaw them overnight in the refrigerator or under cold running water for 20–30 minutes until pliable. Rinse the legs briefly under cold water to remove any surface ice or debris and pat dry with paper towels.
Set a large pot of water to boil (enough to cover the legs) and add a generous pinch of salt. Alternatively, prepare a steamer basket over simmering water.
Cooking the King Crab
Boiling (quick method)
When the water reaches a rolling boil, add the crab legs. Boil for 4–5 minutes if thawed (6–8 minutes if previously frozen). Do not overcook — the shell will turn bright orange and the meat will be hot and opaque. Remove legs with tongs and drain briefly.
Steaming (preferred for flavor)
Place crab legs in a steamer basket over simmering water, cover, and steam for 6–8 minutes (8–10 minutes if frozen). The legs should be heated through and fragrant. Remove with tongs and set on a serving platter.
Butter Sauce and Finishing
In a small saucepan over low heat, melt the unsalted butter. Add the minced garlic and gently cook for 30–60 seconds until fragrant — avoid browning. Stir in the juice from the reserved 1/2 lemon, sea salt, and black pepper.
Remove the butter from heat and stir in the chopped parsley. Taste and adjust seasoning (add additional salt or lemon if desired). Reserve a couple of tablespoons warm for dipping and pour the remainder into a small serving bowl if serving table-side.
Using kitchen shears or a nutcracker, crack the thicker sections of shell lengthwise or at the joints so guests can access the meat. For presentation, keep leg segments whole but partially cracked. Arrange the crab legs on a warmed platter, drizzle lightly with a tablespoon of the garlic butter, and sprinkle with a pinch of cracked black pepper.
Notes and Tips
To maximize meat retrieval, warm the crab legs slightly rather than overcooking; king crab is typically sold pre-cooked and only needs reheating. For easier cracking, use kitchen shears, a mallet, or seafood crackers and small forks or picks to extract meat. Save any leftover shell juices as a flavorful base for bisques or sauces.
