Method
Fresh Orange Juice
Prepare
Wash the oranges under cold water. Roll each orange on the counter applying gentle pressure to loosen the juices.
Halve the oranges crosswise and juice using a manual citrus juicer or electric reamer until most juice is extracted. Strain through a fine mesh sieve into a pitcher if you prefer pulp-free juice; leave pulp if you like more texture.
Taste and, if desired, stir in cold water to loosen consistency and 1 tsp sugar or simple syrup to sweeten. Add ice cubes if serving immediately.
Serve chilled in a glass. Stir before pouring if juice has settled.
Fresh Apple Juice
Prepare
Wash apples thoroughly. Core and chop apples into pieces large enough for your juicer or blender; peel only if desired (peel contains nutrients and flavor).
If using a juicer: feed apple pieces through the juicer, collecting juice in a container. If using a blender: add apple pieces and 2 tablespoons cold water to the blender, blend until smooth, then strain through a fine mesh sieve or cheesecloth to extract juice.
Immediately stir in 1 teaspoon lemon juice to prevent browning and preserve bright flavor. Add ice if serving cold.
Fresh Cranberry Juice
Simmer Method (recommended for fresh/frozen cranberries)
Rinse cranberries and place in a medium saucepan with 1 cup water. Bring to a boil over medium-high heat, then reduce to a simmer and cook 8–10 minutes, stirring occasionally, until cranberries have burst and softened.
Remove from heat and mash the cooked cranberries with a spoon or potato masher to release more juice. Let cool 5 minutes.
Strain the mixture through a fine mesh sieve or cheesecloth into a bowl or pitcher, pressing solids to extract as much liquid as possible. Discard solids or use as compote.
Taste and adjust sweetness to your preference. Cranberry juice is naturally tart; a bit more sweetener will balance it if desired.
Fresh Grapefruit Juice
Prepare
Wash grapefruit and roll on the counter to loosen juices. Cut in half crosswise.
Juice each half with a manual or electric citrus juicer. Strain through a fine mesh sieve if you prefer less pulp.
Taste and, if too tart, stir in 1 teaspoon honey or sugar and 1 tablespoon cold water to dilute slightly. Add ice if serving immediately.
Serve chilled. Optionally garnish with a thin slice of grapefruit or a mint sprig.
