Build and chill
Add 2 oz Canadian Club 12yr, 0.75 oz jasmine green tea cordial, 0.25 oz fresh lemon juice and 0.25 oz simple syrup into a mixing glass or shaker filled with ice. Stir gently for 10–15 seconds to chill and lightly dilute; this keeps the highball delicate and balanced.
Prepare glass
Fill a highball glass (10–12 oz) with fresh ice (large clear cubes or slightly crushed if you prefer a lighter texture).
Top / Finish
Strain and top
Fine-strain the chilled mixture from the mixing glass into the prepared highball glass over ice. Top with approximately 3.5 oz chilled soda water, pouring gently down a bar spoon or along the inside of the glass to preserve carbonation and create a light effervescent layer.
Garnish and serve
Express a lemon peel over the drink if you desire a brighter citrus top note, then drop the peel in or use a thin lemon wheel on the rim. Float a jasmine blossom or sprinkle a few edible jasmine petals or micro-mint on top for an aromatic, botanical finish. Serve with a long stirring straw so the drink can be lightly re-stirred as it mellows.
