Trim and clean ribs

Pat ribs dry with paper towels. If the membrane on the bone side is still attached, loosen it with a butter knife at one end and peel it off using a paper towel for grip. Trim any large excess fat or loose pieces of skin so the surface is even.

Make the dry rub

In a small bowl combine brown sugar, smoked paprika, garlic powder, onion powder, black pepper, kosher salt, ground cumin, dried thyme, and cayenne. Whisk or stir until evenly blended.

Apply binder and rub

In a separate small bowl whisk together the apple cider vinegar, mustard, water, and neutral oil. Lightly brush the mixture over both sides of the ribs — this acts as a binder so the dry rub adheres and helps the rub dissolve slightly. Sprinkle the dry rub evenly and liberally over both sides, pressing gently so it clings to the meat. Let rest at room temperature for 20–30 minutes, or refrigerate uncovered for up to 2 hours for a drier surface and better bark (if refrigerating, remove 30 minutes before cooking).

Cooking (Oven or Grill)

Preheat oven to 275°F (135°C). Place ribs bone-side down on a wire rack set inside a rimmed baking sheet or roasting pan. Optionally add a shallow layer (about 1/4 inch) of water or apple juice to the pan to catch drips and add humidity. Tent the ribs loosely with foil (foil should not be tightly sealed over the rack; leave a small vent) and roast for 2 to 2.5 hours until ribs are tender but not falling completely off the bone and the rub has formed a dark crust.

Grill method (for crisp exterior and smoke)

Set up grill for indirect heat (coals to one side or burners off under the ribs). Preheat to a stable 275–300°F (135–150°C). Place ribs bone-side down on the cool side, cover, and cook for 1.5–2 hours. For added smoky flavor, add a small handful of soaked wood chips on coals or in a smoker box. Finish over direct heat briefly if you want a more pronounced crust (1–3 minutes per side), watching carefully to avoid flare-ups.

Crisp and finish

For an even drier, crispier bark, remove foil (if used) during the last 10–15 minutes of cooking. If you prefer the outside slightly glazed, dust a light additional pinch of the dry rub and return to heat for 5–10 minutes. Let cooked ribs rest 10 minutes before slicing between the bones. This resting time helps juices redistribute and the crust set.

Serving & Garnish

Slice ribs between bones into individual ribs or portions. Transfer to a platter, sprinkle the optional extra dry rub lightly over the top if you want more intense flavor, and garnish with chopped parsley. Serve with lemon wedges on the side for a bright finish. Offer extra salt and pepper if needed.
