Chill service plates and prepare ice bed

Place a shallow serving bowl or platter in the refrigerator for 10–15 minutes to chill. Meanwhile, fill a larger serving tray or bowl with crushed ice (about 4 cups) to create an ice bed that will keep caviar cool during service.

Prepare caviar jars for presentation

Remove the caviar jars (Siberian, Sevruga, Osetra, Beluga) from refrigeration 5 minutes before service to take the chill off slightly but remain cold. Do not let caviar sit at room temperature for longer than 10 minutes. If the caviar is in large tins, use a cold, non-reactive bowl to portion; if in small jars, present jars directly on the ice bed.

Arrange caviar on ice

Line the chilled serving bowl or platter with a thin layer of crushed ice. Nestle each caviar jar or portion (1 oz each) into the ice bed spaced evenly so guests can see labels/types. Keep jars slightly tilted so the roe is visible. Top up ice as needed to ensure constant chill.

Warm accompaniments

Warm blini or toast points briefly: heat a skillet over medium-low, add 1 tbsp butter and warm blini 20–30 seconds per side until just toasted, or warm toast points in a 300°F (150°C) oven for 5 minutes. Remove from heat and keep covered with a clean towel to stay warm.

Prepare crème fraîche and garnish

Spoon 1 cup crème fraîche into a small chilled bowl. Fold in 2 tbsp finely chopped chives and a pinch (about 1/8 tsp) of sea salt; mix gently and taste. Transfer to a serving dish and place on the ice bed near the caviar selections.

Portioning and serving etiquette

Use non-reactive spoons (mother-of-pearl or bone) — one spoon per caviar type — to preserve flavor. Show guests how to serve: place a small dab (about 1/4–1/2 tsp) of crème fraîche on a blini or toast, then top with 1/4–1/2 tsp of the chosen caviar. Offer a lemon wedge to those who want a light squeeze; advise minimal lemon as it can overpower delicate varieties. Do not mix varieties on the same spoon to allow tasting each type distinctly.

Tasting order recommendation

Recommend guests taste the caviars from mildest to strongest to appreciate subtle differences: Siberian (mild, creamy) → Osetra (nutty, medium) → Sevruga (briny, small pearls) → Beluga (rich, buttery, largest pearls). Provide palate cleansers like neutral bread or plain cracker if desired.

Maintain temperature during service

Monitor the ice bed and replenish crushed ice as it melts to keep caviar at ~28–32°F (-2 to 0°C). Limit total out-of-fridge time for any single jar to under 20 minutes; return unopened jars to refrigeration between service intervals.

Leftovers and storage

After service, reseal opened jars tightly, wipe rims dry, and store them in the coldest part of the refrigerator (not the door) at 28–32°F (-2 to 0°C). Consume opened caviar within 2–3 days for best quality (follow supplier guidance). Discard any caviar that has an off odor or change in color/texture.

Place the warmed blini/toast points in a basket or on a warm plate covered with a towel to retain temperature; set the crème fraîche dish, chives, lemon wedges, and finishing salt nearby for guests to assemble their bites. Provide one non-reactive spoon per caviar type and small tasting plates for each guest.
