For the eggs & bacon

Cook bacon

Heat a large non-stick frying pan over medium heat. Add the bacon slices in a single layer and cook 3–4 minutes per side until crisped to your liking. Transfer to a plate lined with paper towel to drain. Keep the bacon fat in the pan for flavor; pour off excess if there is more than 1 tbs.

Fry eggs (sunny-side or over-easy)

Lower heat to medium-low and add 1 tsp vegetable oil and 1 tbs butter to the same pan. When butter foams, crack eggs into the pan, spacing evenly. Sprinkle 1/4 tsp black pepper and 1/2 tsp salt across the eggs. For sunny-side up: cook 3–4 minutes until whites set but yolks still runny. For over-easy: cook 2–3 minutes, flip carefully and cook 30–45 seconds more. Remove eggs to a warm plate and cover loosely with foil.

Finish

Sprinkle chopped chives over the eggs just before serving.

In a second skillet, heat 1 tbs olive oil over medium heat. Add sausages and cook, turning occasionally, 10–12 minutes until browned all over and cooked through (internal temp 70°C / 160°F). Transfer to a plate and keep warm, or slice into bite-sized pieces after resting 3 minutes.

Wipe the pan lightly, add the canned baked beans, 1 tsp soft brown sugar and 1 tsp Worcestershire sauce. Warm gently over low-medium heat, stirring occasionally, 4–5 minutes until bubbling and the sugar dissolves. Taste and adjust seasoning.

For the mushrooms & tomatoes

In the bacon pan (or a clean pan if preferred) add 1 tbs butter and a minced garlic clove over medium heat. When fragrant (30 seconds), add halved mushrooms and cook without stirring for 2 minutes so they brown, then stir and cook another 3–4 minutes until softened and golden.

Add halved cherry tomatoes and 1 tsp thyme. Cook 2–3 minutes until tomatoes begin to soften and release juices. Season with 1/2 tsp salt and 1/4 tsp black pepper. Remove from heat and keep warm.

For the toast & assembly

While proteins are cooking, preheat a grill or toaster to medium-high. Brush both sides of bread with olive oil and toast until golden (or grill 1–2 minutes per side). Spread softened butter on hot toast. If using cheddar, sprinkle on hot toast so it melts slightly.

Plate assembly: place two slices of buttered toast on each plate. Arrange sausages (whole or sliced), bacon, a spoonful of beans, sautéed mushrooms and tomatoes beside the toast. Top each plate with two eggs. Add sliced avocado if using, and extra salt/pepper to taste.

Serve immediately while hot. Provide extra condiments (ketchup, hot sauce) as desired.
