Method
Prepare the Burger Patty
Mash Black Beans
In a large mixing bowl, mash the canned black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.
Mix Ingredients
Add the cooked quinoa, grated carrots, finely chopped red bell pepper, finely chopped onion, minced garlic, ground cumin, coriander, salt, black pepper, breadcrumbs, and the beaten egg to the mashed black beans. Mix until everything is well combined.
Form Patties
Divide the mixture into two equal parts and shape them into burger patties.
Chill Patties
Place the patties on a plate and refrigerate for about 30 minutes to firm up.
Cook the Patties
Heat Oil
In a non-stick skillet, heat a tablespoon of oil over medium heat.
Cook Patties
Once hot, add the chilled patties to the skillet and cook for about 4-5 minutes on each side, or until golden brown and heated through.
Assemble the Burger
Toast Buns
If desired, toast the burger buns in the skillet for 1-2 minutes until lightly golden.
Layer Ingredients
On the bottom half of each bun, place a lettuce leaf, followed by a slice of tomato, the cooked burger patty, and drizzle with special sauce. Top with the other half of the bun.
