Pancake & Toppings
Make batter
In a medium bowl whisk together 0.75 cup flour, 1 tsp sugar, 0.5 tsp baking powder and 0.25 tsp salt. In a separate bowl whisk 0.5 cup milk, 1 large egg and 1 tbsp melted butter. Pour wet into dry and whisk until just combined; a few small lumps are okay.
Cook pancake
Heat a nonstick skillet or griddle over medium heat and lightly grease. Pour about 1/3 cup batter to form one 6-7 inch pancake. Cook until edges set and bubbles form (about 2–3 minutes), flip and cook 1–2 minutes more until golden and cooked through. Keep warm on a low oven (100–120°C / 210–250°F) while you finish other components.
Make maple-cinnamon butter
In a small bowl combine 2 tbsp softened butter, 1 tbsp pure maple syrup and 0.25 tsp ground cinnamon. Mash together until smooth and spreadable. Dollop on warm pancake so it slightly melts.
Eggs
Heat a small nonstick skillet over medium-low and add 1 tsp butter or oil. Crack 2 large eggs into the pan. For sunny-side or over-easy: cook until whites are set (2–3 minutes); for over-easy flip gently and cook 20–30 seconds more. Season with 0.25 tsp salt and 0.125 tsp pepper. Keep warm or plate with other components.
Choice of Protein
Cook the protein of your choice: - Bacon: In a skillet over medium heat cook 3 slices until crisp, turning occasionally, 6–8 minutes. Drain on paper towel. - Sausage links: Cook 2 links in a skillet over medium heat, turning to brown all sides, 8–10 minutes until internal temp reaches 160°F (71°C). - Vegan sausage patties: Cook 2 patties per package instructions, usually 3–4 minutes per side until browned and heated through. Keep warm.
Smash Patty & Cheese
Preheat a heavy skillet or flat griddle over high heat and add 1 tsp neutral oil. Form 3 oz loosely packed ball of ground beef. Place on hot surface and immediately smash thin with a spatula to a 3–4 inch patty. Season the top with 0.25 tsp kosher salt and 0.0625 tsp black pepper. Cook without moving 1.5–2 minutes until edges brown and juices rise, then flip and cook 30–60 seconds. Top with 1 slice American cheese and remove from heat to melt.
Assembly & Condiments
Toast the bun or roll lightly on the griddle if desired. Spread 1 tbsp mayonnaise on the bottom bun. Place the American-cheese-topped smash patty on the mayo. Add the cooked choice of protein (bacon or sausage) on top of the patty, then place the two eggs on top of the protein. Top with the pancake (maple-cinnamon butter side up) or place pancake on side according to service preference. Finish with the top bun and serve immediately.
Side
Cook 1 cup frozen tots according to package instructions — oven: preheat to 425°F (220°C), toss tots with 1 tsp oil, spread in a single layer and bake 18–22 minutes turning once until golden and crispy; air fryer: 400°F (200°C) 10–12 minutes shaking halfway. Season with salt to taste. Serve alongside the sandwich and pancake.
