Method
Steak
Bring to room temperature
Remove the 6 oz sirloin from the refrigerator 20–30 minutes before cooking so it comes closer to room temperature for even cooking.
Season
Pat the steak dry with paper towels. Rub with 1 tablespoon olive oil, then season both sides with 1/2 tsp kosher salt and 1/4 tsp freshly ground black pepper.
Grill or pan-sear
Preheat a grill or heavy skillet (cast iron) over high heat until very hot. Place steak on the grill or skillet and cook 3–4 minutes per side for medium-rare (internal temperature ~130–135°F / 54–57°C). Adjust time for desired doneness. Do not move the steak while searing to get a good crust.
Rest & slice
Transfer steak to a cutting board and tent loosely with foil. Rest 5–7 minutes. Slice thinly across the grain into strips about 1/4-inch thick.
Grilled peppers & onions
While the steak rests (or simultaneously if you have a spare burner), heat 1 tablespoon olive oil in a skillet over medium-high heat. Add the sliced red and green bell peppers and sliced onion. Season with 1/4 tsp salt and 1/8 tsp black pepper.
Cook, stirring occasionally, until vegetables are softened and slightly charred at edges, about 6–8 minutes. Remove from heat and keep warm.
Tater tots
Preheat oven to 425°F (220°C) or prepare air fryer according to manufacturer directions for frozen tots. Arrange 6 oz of frozen tater tots on a rimmed baking sheet in a single layer; toss lightly with 1 tsp vegetable oil if package recommends for crisping.
Bake 18–22 minutes, turning once halfway, until golden and crisp. If using an air fryer, cook 12–15 minutes at 400°F (200°C) shaking once. Keep hot.
Assembly & finishing
Warm the flour tortilla for 15–20 seconds per side in a dry skillet or 10 seconds in the microwave to make it pliable.
Place the warm tortilla on a flat surface. In the center, layer: half of the shredded cheddar (about 1/4 cup) to create a base, then the sliced steak (all strips), spoon the grilled peppers and onions on top of the steak, add the cooked tater tots (distribute evenly but keep toward center), scatter pickled jalapeños (about 2 tablespoons) to taste, then top with the remaining cheddar so it melts from the heat of the ingredients.
Add optional toppings: 1 tablespoon sour cream, chopped cilantro, and a squeeze of lime if desired.
Fold the burrito: fold the bottom edge up over the filling, fold both sides in, then roll tightly away from you to enclose. If desired, sear the burrito seam-side down in a hot skillet for 1–2 minutes per side to seal and add a light crisp.
Slice in half crosswise and serve immediately while hot.
