Sweeten yogurt

In a medium bowl, stir together the Greek yogurt, 2 tablespoons honey, and 1 teaspoon vanilla extract until smooth and evenly sweetened.

Wash the mixed berries. If strawberries are large, quarter them. Slice the banana into 1/4-inch rounds. Gently fold half of the mixed berries and all banana slices into the sweetened yogurt, reserving the rest of the berries for layering and topping.

Granola & Crunch

If you want extra toasted oats, warm a small skillet over medium heat and toast 1/4 cup rolled oats, stirring for 2–3 minutes until fragrant and lightly golden. Let cool.

Combine the toasted oats (if using) with 1 cup granola and 1/4 cup chopped honey-roasted nuts in a small bowl. This is your crunchy layer.

Make the compote: place 1 cup frozen mixed berries, 1 tablespoon sugar or maple syrup, 1/2 teaspoon lemon juice, and 2 tablespoons water in a small saucepan over medium heat.

Cook, stirring occasionally, until the berries break down and the mixture thickens slightly, about 6–8 minutes. Mash gently with the back of a spoon for a chunky compote. Remove from heat and let cool slightly (will thicken more as it cools).

Assembly

Prepare two 16-oz (or four 8-oz) mason jars or similar clear serving glasses. Spoon about 1/4 cup of the compote into the bottom of each jar (if not using compote, use a few whole berries).

Add a generous layer (about 1/2 cup) of the sweetened yogurt mixture on top of the compote in each jar, smoothing the surface with the back of a spoon.

Sprinkle about 2–3 tablespoons of the granola & nut mixture over the yogurt layer in each jar to add crunch.

Repeat layers: add another 1/4 cup compote (or berries), another 1/2 cup yogurt, and a final sprinkle of granola so each jar has three visible layers: compote, yogurt, granola.

Top each jar with the reserved fresh berries, a few banana slices, and a light drizzle (about 1/2 teaspoon) of extra honey. Sprinkle 1 teaspoon chia seeds over the top of both jars (split between them) and tuck a mint leaf for garnish if using.

Serve & Storage

Serve immediately for maximum crunch. If preparing ahead, cover jars and refrigerate up to 24 hours; add the final granola sprinkle just before serving to retain crunch.

Leftovers: stored refrigerated, assembled jars keep 24 hours; yogurt mixture and compote keep 3–4 days separately.
