Bring to room temperature

Remove the Prime Angus sirloin steak from the refrigerator 30 minutes before cooking. Pat dry with paper towels.

Season

Rub the steak with 1 tablespoon olive oil. Evenly season both sides with 1 teaspoon kosher salt, 1 teaspoon black pepper, and 1 teaspoon garlic powder.

Preheat grill

Preheat an outdoor grill or cast-iron skillet to high heat (around 450–500°F / 230–260°C). Ensure grates or skillet are well oiled to prevent sticking.

Grill steak

Place the steak on the hot grill or skillet. For a 1-inch sirloin, grill 4–5 minutes per side for medium-rare (internal temp 130–135°F / 54–57°C). Adjust time for thickness and desired doneness.

Rest and butter

Remove steak from heat and transfer to a cutting board. Add 1 tablespoon butter on top and tent loosely with foil. Let rest 5–10 minutes before slicing against the grain into thin strips.

Tots

Preheat oven

Preheat oven to 425°F (220°C). If using an air fryer, preheat to 400°F (200°C).

Prepare tots

Spread 16 oz frozen tater tots in a single layer on a rimmed baking sheet. Drizzle or brush with 1 tablespoon vegetable oil and sprinkle with 1 teaspoon salt; toss lightly to coat.

Bake or air-fry

Bake for 20–25 minutes, turning halfway, until golden and crisp. If air-frying, cook 12–16 minutes, shaking basket occasionally. Ensure tots are hot and crispy.

Assemble loaded tots

When tots are hot, transfer them to an ovenproof serving dish or leave on the baking sheet. Evenly sprinkle 1 cup shredded sharp cheddar over tots, then return to the oven or broiler 1–2 minutes just until cheese melts. Top with chopped bacon, 2 tbsp sliced pickled jalapeños (if using), 2 tbsp green onions, a dollop of 1 tbsp sour cream, and a light dusting of 1 tsp smoked paprika.

Cook bacon until crispy (pan-fry or bake at 400°F / 200°C for 15–20 minutes). Drain on paper towels and chop into pieces. Prepare green onions, shred cheese, and have sour cream and jalapeños ready to top the melted-cheese tots as described in the Tots section.

Texas-style side (Texas toast)

Prepare garlic butter

Mix 2 tablespoons softened butter with 1 teaspoon minced garlic and 1 teaspoon chopped parsley (optional) until combined.

Toast

Spread the garlic butter on both sides of 4 slices Texas toast. Grill on a skillet over medium heat or bake in the oven at 375°F (190°C) for 6–8 minutes, flipping halfway, until golden and crisp.

Finish & serve

Divide loaded tots onto plates or serve family-style. Add sliced grilled Prime Angus sirloin alongside the tots and a piece or two of Texas toast. Garnish steak with any pan juices. Serve immediately while tots and steak are hot.
