Preheat and prepare
Preheat your waffle iron according to manufacturer instructions. Lightly grease plates of the waffle iron with a little melted butter or oil if it’s not nonstick.
Dry ingredients
In a large mixing bowl, whisk together the gluten-free flour blend, granulated sugar, baking powder, baking soda, and sea salt until evenly combined.
Combine batter
Pour the wet mixture into the dry ingredients and stir gently until just combined. Do not overmix; a few small lumps are okay. Let the batter rest for 5 minutes to hydrate the gluten-free flour.
Cook waffles
Spoon or pour the recommended amount of batter for your waffle iron (usually 3/4 to 1 cup) onto the preheated iron. Close and cook until the waffle is golden brown and crisp at the edges, about 4–6 minutes depending on your iron. Remove to a wire rack and keep warm in a low oven (about 200°F / 95°C) while you cook remaining waffles. This recipe yields 6 medium waffles (about 3-inch rounds or equivalent).
Assemble the Sammy
Prepare spread
In a small bowl, mix the mayonnaise with Dijon mustard, salt, and pepper. Taste and adjust seasoning.
Layer the sandwich
Place one warm waffle on a plate. Spread about 1 tablespoon of the mayo-mustard mixture evenly over the waffle. Top with a layer of sliced turkey (about 2–3 oz), a slice or two of cheddar (total ~1–2 oz), a few spinach leaves, and 2–3 thin tomato slices. If using avocado or pickles, add them now. Finish with another spread of 1 tablespoon mayo-mustard on a second waffle and place it on top to form a sandwich.
Optional press & melt
If you prefer the cheese melted, place the assembled sandwich on a baking sheet and put in a 350°F (175°C) oven for 5–7 minutes, or use a skillet over medium-low heat and press gently with a spatula, covering with a lid for 2–3 minutes, until the cheese softens. Watch closely so the waffles do not over-brown.
