Tater tots

Bake or pan-fry tots

Preheat oven to 425°F (220°C) if baking. Spread frozen tater tots in a single layer on a rimmed baking sheet and toss with 1 tsp neutral oil, 1/4 tsp salt and 1/8 tsp paprika (if using). Bake for 18–22 minutes, turning once halfway, until golden and crisp. Alternatively, heat a nonstick skillet over medium heat with 1 tsp oil and cook tots in a single layer, turning every 3–4 minutes until evenly browned and crisp, about 12–15 minutes total.

Choice of protein

Cook bacon

If using bacon: place 3 slices in a cold skillet, then turn heat to medium. Cook 6–10 minutes, turning occasionally, until evenly browned and crisp to your liking. Transfer to paper towels to drain.

Cook pork sausage

If using pork sausage links: heat a skillet over medium heat. Add 2 links and cook 10–12 minutes, turning regularly, until internal temperature reaches 160°F (71°C) and browned on all sides. Transfer to a plate and keep warm.

Cook vegan sausage

If using vegan sausage: heat 1 tsp vegetable oil in a skillet over medium. Add 2 vegan sausages and cook 6–8 minutes, turning occasionally, until browned and heated through. Remove and keep warm.

Eggs (or tofu scramble)

Make eggs - sunny side / over easy option

For eggs: heat 1 tbsp butter or a little oil in a nonstick skillet over medium-low. Crack 2 eggs into a small bowl (or straight into pan) and gently slide into the skillet. Sprinkle 1/4 tsp salt and 1/8 tsp pepper. For sunny-side: cook undisturbed 2–3 minutes until whites are set but yolks still runny. For over-easy: cook 2 minutes, flip gently and cook 20–30 seconds more. Remove to a plate.

Make eggs - scrambled option

For scrambled eggs: beat 2 eggs with a pinch of salt and pepper. Heat 1 tbsp butter over medium-low, pour eggs in and stir slowly with a spatula until soft curds form, 1–2 minutes. Remove from heat just before fully set; carryover will finish them.

Tofu scramble (vegan egg substitute)

For tofu: crumble 100 g firm tofu with your hands or fork. Heat 1 tbsp oil in a skillet over medium, add crumbled tofu and a pinch of salt and pepper. Cook 4–6 minutes until warmed and slightly browned; optionally add 1/8 tsp turmeric for color and 1/8 tsp garlic powder for flavor. Adjust seasoning and remove from heat.

Texas toast

Toast Texas toast

Spread 1 tbsp softened butter across 2 slices of Texas toast and sprinkle 1/8 tsp garlic powder if using. Toast in a skillet over medium heat 2–3 minutes per side until golden and crisp, or place under a broiler/ in toaster oven for 3–4 minutes per side. Keep warm.

Finishes & plating

Plate the meal: place the Texas toast on the plate, add the cooked eggs (or tofu scramble) beside it, arrange the chosen protein (bacon, pork sausage, or vegan sausage) next to the eggs, and pile the hot tater tots on the side. Garnish with chopped parsley and serve ketchup or hot sauce on the side. Serve immediately while hot.
