Whisk eggs

In a large bowl, crack 10 eggs and add 1 cup whole milk, 1 tsp salt, and 1 tsp black pepper. Whisk until well combined and slightly frothy.

Cook eggs

Heat 2 tablespoons unsalted butter in a nonstick skillet over medium-low heat. Pour the egg mixture into the skillet. Stir gently and continuously with a spatula, scraping the bottom, until eggs are soft-cooked but still moist, about 4–6 minutes. Remove from heat.

Optional Mix-ins

If using any mix-ins (sausage, bacon, ham, peppers, green onions, cilantro), fold them into the finished scrambled eggs until evenly distributed. Use about 1 cup total of meats and/or vegetables per preference; ensure meats are pre-cooked and warm.

Assemble Quesadillas

Lay out the 5 flour tortillas on a clean work surface. Divide the shredded cheeses so that each quesadilla gets approximately 1 ounce (roughly 1/4 cup) cheddar and 2/5 ounce (roughly 3 tablespoons) Monterey Jack — total about 1/2 cup cheese per quesadilla.

Place about 1/5 of the scrambled egg mixture (approximately 1/2 cup) onto one half of each tortilla, spreading to cover but leaving a 1/2-inch border. Top the eggs with the cheese portion for that tortilla and any chosen mix-ins. Fold the tortilla over to form a half-moon.

Cook Quesadillas

Heat a large skillet or griddle over medium heat. Add a light brush of vegetable oil or spray (about 1 tablespoon total for the surface). Place one folded quesadilla in the skillet. Cook 2–3 minutes per side, pressing gently with a spatula, until the tortilla is golden brown and the cheese is melted. Repeat with remaining quesadillas, working in batches if necessary. Total cooking time for all five: about 10–15 minutes.

After cooking, transfer quesadillas to a cutting board and let rest 1 minute. Using a sharp knife or a pizza cutter, cut each whole quesadilla into 4 equal pieces, yielding 20 pieces total.

Arrange the 20 quesadilla pieces on a platter. Serve warm with salsa, sour cream, and pickled jalapeños on the side.
