Grilled Onion
Prep
Peel the large yellow onion and slice into 1/4-inch thick rings. Separate rings into individual pieces if desired.
Season and cook
Heat a skillet over medium heat and add 1 tablespoon olive oil. When shimmering, add the onion rings in an even layer. Sprinkle with 1/4 teaspoon salt, 1/8 teaspoon black pepper, and 1/4 teaspoon smoked paprika. Cook 6–8 minutes, stirring or flipping occasionally, until the onions are softened and have golden-brown edges and light caramelization. Remove from skillet and set aside.
Vegan Bakon
In the same skillet (wipe out excess oil if there is too much), reheat to medium. Add the vegan bacon slices in a single layer. Cook according to package guidance or about 2–3 minutes per side until browned and slightly crisp, turning once. If using a pre-seasoned hickory veggie bacon, no extra seasoning is needed. Transfer to a plate lined with paper towel to drain briefly.
Tomato & Lettuce Prep
Slice the tomatoes into 1/4-inch thick slices. Lightly season the tomato slices with the optional 1/2 teaspoon lemon juice (or a light sprinkle of salt) if desired. Wash and pat dry 8 lettuce leaves, keeping them whole.
Bread & Mayo
Spread about 1 tablespoon of vegan mayonnaise on one side of each of 4 bread slices (total ≈ 1/2 cup used across 4 sandwiches). If toasting the bread, lightly brush the outside faces of the 4 bread slices with the 2 teaspoons vegan butter or olive oil and toast face-down in a clean skillet over medium heat until golden, about 1–2 minutes per side. Alternatively, toast in a toaster or oven to preference.
Assemble
Place the toasted (or untoasted) mayo-spread side up for the base of each sandwich. Layer on: 3 slices of cooked vegan bakon, 2–3 slices of grilled onion (distribute evenly), 2 tomato slices, and 2 leaves of lettuce. Top with remaining bread slice (mayo side down). Press gently to compact.
If making double sandwiches (using two bread slices per sandwich), this recipe yields 4 sandwiches total. Slice each sandwich in half if desired and serve immediately.
Serve
Serve the VLT warm or at room temperature. Offer extra vegan mayo on the side if desired.
