Prepare vegetables
Slice the tomato into 1/4-inch (6 mm) thick rounds (about 4–6 slices per tomato depending on size). Peel the onion and cut into 1/4-inch rings. Wash and dry lettuce leaves; set aside. Season tomato slices lightly with 1/4 tsp salt and a pinch of black pepper; set aside.
Prepare vegan mayo
In a small bowl, combine the vegan mayonnaise (6 tbs) with 1/2 tsp fresh lemon juice (optional) and a pinch of smoked paprika (about 1/8 tsp) for a subtle smoky lift. Stir until smooth and refrigerate until assembly.
Grill the onion
Heat a heavy skillet or grill pan over medium-high heat. Add 1 tablespoon neutral oil and let it shimmer. Add the onion rings in a single layer (work in batches if needed). Cook 3–4 minutes per side until deeply golden and softened, adjusting heat to avoid burning. Sprinkle the onions with a pinch of salt while cooking. Remove to a plate and keep warm.
Prepare and sear the grain-based meat substitute
If using a prepared loaf, slice into 8 slices about 1/4-inch thick. Pat slices dry with a paper towel. Season both sides of each slice with the remaining 3/4 tsp salt, 1/2 tsp black pepper and 1/2 tsp smoked paprika. Heat the same skillet over medium heat and add a drizzle of oil if needed. Add the slices in a single layer (do not overcrowd) and sear 2–3 minutes per side until golden edges appear. During the last 30 seconds of cooking, brush each slice lightly with 1 tsp maple syrup or agave (optional) for a glazed finish. Remove slices and keep warm.
Toast the bread
Split rolls or bread and lightly brush cut sides with 1 tablespoon olive oil or melted vegan butter. Toast in a clean skillet over medium heat or in a toaster oven until golden and slightly crisp, about 1–2 minutes. This prevents sogginess and adds flavor.
Assemble sandwiches
Spread about 1 tablespoon of the prepared vegan mayo on the bottom half of each roll (reserve the rest for service). Layer two slices of the seared grain-based meat substitute on each roll bottom. Top with 2–3 grilled onion rings per sandwich, 2 tomato slices, and 2 lettuce leaves. Add additional salt and pepper to taste if desired. Spread remaining mayo on the top half of the roll and close the sandwich.
Serve
Press the sandwich gently, slice in half if desired, and serve immediately while warm. Offer extra mayo and a small side of pickles or chips. Garnish with a wink of love.
