Prepare fruit and greens

Wash the apple, blueberries, cherries, and spinach thoroughly. Core the apple and cut into 1/2-inch pieces. Pit the cherries if they are not already pitted. Peel the bananas and break into chunks.

If using fresh cherries and you want a thicker, colder smoothie, place cherries and blueberries in the freezer for 20–30 minutes beforehand; alternatively use frozen berries to chill and thicken the drink.

Measure and set aside 1 cup packed fresh spinach and 1 tablespoon chia seeds so they are ready to add to the blender.

Assemble and blend

Add the liquid (1 cup cold water or coconut water) into the blender first. Add the apple pieces, banana chunks, blueberries, pitted cherries, spinach, and chia seeds. Spoon in 1/2 cup yogurt if using, add 1/2 cup ice if using fresh fruit, and the 1/2 teaspoon lemon juice and 1 teaspoon maple syrup or honey if you want added sweetness.

Secure the lid and blend on high for 45–60 seconds, or until very smooth. Stop and scrape down the sides with a spatula after 20–30 seconds if needed, then blend again to fully incorporate the spinach and chia seeds.

Check consistency. If the smoothie is too thick, add 1–2 tablespoons of water or coconut water and pulse to combine. If it is too thin, add a few ice cubes or 1/4 cup frozen blueberries and blend to thicken.

Taste and adjust

Taste the smoothie and adjust sweetness with more maple syrup/honey if desired, and add a touch more lemon juice to brighten if needed. Blend for 5–10 seconds after adjustments.

Pour into glasses and let sit 1–2 minutes for chia seeds to soften slightly, or refrigerate for up to 30 minutes. Stir before serving if seeds have settled.
