Prepare produce

Wash all greens, cucumber, celery, pineapple, and mint/basil thoroughly under cold running water. Pat dry. Trim celery ends, core and chunk pineapple, and slice cucumber into pieces that will fit your juicer or blender. If using a blender, roughly chop the greens so they pack more densely.

Cold-press or blend

If using a cold-press juicer: feed the greens, cucumber pieces, celery stalks, and pineapple chunks through the juicer in alternating batches to maximize yield. If using a high-speed blender: add the cucumber, celery, pineapple, and greens with 1 cup cold filtered water and blend on high until completely smooth.

Strain (if blended)

If you used a blender and prefer a smooth juice, pour the blended mixture through a fine-mesh strainer, nut milk bag, or cheesecloth into a bowl, pressing or squeezing to extract as much liquid as possible. Discard or save the pulp for another use (smoothies, compost, crackers).

Add lemon

Squeeze the juice of 1 fresh lemon into the extracted juice and stir to combine. Taste and add a pinch of sea salt if desired to brighten flavors.

Finishing & Serve

Adjust consistency and chill: if the juice is too thick or intensely flavored, stir in up to 1/2 cup additional cold water to reach your preferred consistency. If you'd like it cold immediately, add the optional ice or chill in the refrigerator for 10–15 minutes.

Serve & garnish: pour the juice into two tall glasses (about 10–12 oz each). Garnish each glass with 2 mint or basil leaves and, if you like, an extra thin cucumber wheel or small pineapple wedge on the rim.
