Prepare produce
Wash all produce thoroughly under cold running water. Scrub the beets gently to remove dirt. Peel the beets with a vegetable peeler if desired, then trim off the tops and root ends. Core the apple and cut into pieces that will fit your juicer chute. Peel the lemon with a knife or vegetable peeler so most of the bitter white pith is removed; cut into halves. If using non-organic produce, remove thick skins as needed. Rinse the ginger; if not organic, peel the ginger with a spoon or small knife.
Juicing
Assemble your cold-press or masticating juicer per manufacturer instructions. Feed the ingredients through the juicer in this order for optimal flavor and yield: apple pieces, lemon halves, ginger, then beets. Collect the juice in a clean container. If you have a two-stage cold press, press the pulp to extract extra liquid. If using a centrifugal juicer, alternate hard and soft items (apple then beet) to help extraction.
Adjust and dilute
Taste the juice. If it's very earthy or intense, stir in up to 1 tablespoon (15 ml) filtered water to mellow the flavor. If you prefer a colder drink, add ice cubes or chill the juice in the refrigerator for 10–15 minutes. Stir well to combine.
Serve with intention
Pour the juice into a tall glass. Take a moment to set an intention or add a mindful thought — the 'love' ingredient — then enjoy. Store any leftover juice in an airtight glass bottle in the refrigerator and consume within 48 hours for best freshness.
