Prepare avocados

Halve the avocados, remove pits, and scoop flesh into a medium mixing bowl.

Mash and season

Use a fork to mash the avocado to a slightly chunky but spreadable texture. Add lime juice, olive oil, minced shallot, chopped cilantro, sea salt, black pepper, and red pepper flakes. Stir until evenly combined. Taste and adjust seasoning (add more lime or salt if needed).

Bread & Assembly

Toast bread

Heat a skillet over medium heat or preheat a toaster. Lightly brush both sides of each slice of sprouted bread with vegan butter or oil. Toast in the skillet (2–3 minutes per side) until golden brown and crisp, or toast to desired doneness in a toaster.

Spread

Divide the avocado spread evenly among the 4 slices of toasted sprouted bread, spreading to the edges with a knife or spatula.

Toppings (optional/upcharge)

Prepare vegan bakon

If using packaged vegan bakon, cook according to package instructions (pan-fry 1–2 minutes per side until crisp) and drain on paper towel. If using homemade, cook until crisp.

Assemble toppings

Place one slice of cooked vegan bakon on each avocado toast (or arrange as desired). Top with halved cherry tomatoes and scatter microgreens or baby arugula. Finish with a sprinkle of everything bagel seasoning and optional lemon zest for brightness.

Serve

Serve immediately while toast is warm and bakon is crisp. Offer extra lime wedges and hot sauce at the table if desired.
