Toast bread

Optional: Lightly brush each bread slice with olive oil if using. Toast the 4 slices of sprouted bread in a toaster or on a skillet over medium heat until golden and slightly crisp, about 2–3 minutes per side on a skillet or 1–2 cycles in a toaster.

Spread 1 tablespoon of vegan mayonnaise evenly on the inside face of each slice of toasted bread (use 3 tbs total; reserve 1 tbs to adjust creaminess if desired).

Prepare avocado

Halve and pit the avocado. Scoop the flesh into a bowl and mash lightly with a fork until slightly chunky. Stir in 1 teaspoon lemon juice, 1 teaspoon sea salt, 1/2 teaspoon black pepper and 1/4 teaspoon red pepper flakes. Taste and adjust seasoning.

Spread the mashed avocado evenly over two of the mayonnaise-coated bread slices (about half the avocado per sandwich).

Quick Vegan Slaw

Make slaw

In a small bowl combine 1 cup shredded cabbage and 1/2 cup grated carrot. Add 1 teaspoon apple cider vinegar, 1/2 teaspoon maple syrup, 1/2 teaspoon olive oil, 1/4 teaspoon salt and 1/8 teaspoon black pepper. Toss until coated and let sit 2–3 minutes so the cabbage softens slightly.

Taste and adjust sweetness or acidity as needed. Use all of the slaw between the two sandwiches (roughly 3–4 tablespoons per sandwich).

Slice vegetables

Thinly slice the tomato (about 1/4-inch thick) and separate the butter lettuce leaves. If using, separate any dense sprouts to avoid bunching.

On top of the avocado layer arrange 2 lettuce leaves per sandwich, then 2–3 tomato slices each, a layer of red onion (about 1 tablespoon per sandwich), and about 1/4 cup mixed sprouts per sandwich.

Assembly & Finish

Top the vegetables with the prepared quick slaw (about 2–3 tablespoons per sandwich). If you like, sprinkle 1/4 teaspoon everything bagel seasoning over each sandwich (optional).

Close each sandwich with the remaining mayonnaise-coated bread slices, mayo-side down. Press gently, then cut each sandwich in half diagonally.

Serve immediately, or wrap tightly and chill for up to 4 hours if taking as a packed lunch (note: avocado will brown slightly over time; extra lemon slows browning).
