Harvesting Grapes

Rinse the harvested grapes under cool running water to remove dirt and residues.

Cleaning Grapes

Crush the grapes gently using a grape crusher or by hand, ensuring the skins are intact to allow for skin contact during fermentation.

Crushing Grapes

Transfer the crushed grapes along with their skins into a fermentation vessel. Add the water to the crushed grapes.

Setting up Fermentation

Sprinkle the wine yeast over the grape mixture and stir gently to combine.

Adding Yeast

If desired, add sugar to the mixture to enhance sweetness, stirring until dissolved.

Optional Sugar Addition

Cover the fermentation vessel with a cloth or lid, allowing it to breathe while preventing contaminants. Let the mixture ferment for 10-14 days at a consistent temperature of 20-25°C (68-77°F), stirring daily.

Covering and Fermenting

After fermentation is complete, press the grape must to extract the juice, separating it from the skins and solids.

Pressing the Must

Transfer the extracted juice into a clean fermentation vessel or oak barrels for aging. Allow the wine to age for at least 6 months, sampling periodically to check for flavor development.

Aging the Wine

Once aging is complete, filter the wine if necessary and transfer it into clean bottles. Seal tightly with corks or caps.

Bottling the Wine

Label the bottles with the production date and store them in a cool, dark place for further aging or immediate enjoyment.
