Ham and Cheese Sandwich

Fit Turkey Wrap

In a large pot, heat 6 liters of filtered water to about 165°F (74°C). Add 5 cups of pale malt, 1 cup of caramel malt, and 0.5 cup of flaked corn. Stir the mixture well and let it rest at 150°F (65°C) for 60 minutes to allow the sugars to extract.

Mashing

After mashing, sparge the grains by rinsing them with additional hot water to collect about 6 liters of wort in a separate pot.

Sparging

Bring the collected wort to a boil. Once boiling, add 1 tablespoon of Citra hops and boil for 30 minutes.

Boil the Wort

After 30 minutes, add 1 tablespoon of Simcoe hops and 0.5 tablespoon of Cascade hops. Continue boiling for an additional 15 minutes.

Add Remaining Hops

Remove the pot from heat and cool the wort quickly using an immersion chiller or an ice bath until it reaches around 70°F (21°C).

Cool the Wort

Once cooled, transfer the wort to a sanitized fermentation vessel. Pitch the American ale yeast and seal with an airlock. Allow it to ferment at room temperature (around 68-72°F or 20-22°C) for 1-2 weeks.

After fermentation is complete, sanitize bottles and caps. Prepare a priming solution if needed by boiling 3/4 cup of corn sugar in 2 cups of water and cooling it.

Prepare for Bottling

Siphon the beer into the bottles, leaving about 1 inch of headspace. Cap the bottles securely and store them at room temperature for carbonation.
