Prepare chocolate

Place the 8 oz chopped semisweet chocolate in a heatproof bowl and set aside in a warm, dry place so it’s ready to melt when the cream is hot.

Heat cream

In a small saucepan, combine 1 cup heavy cream and 1 tsp corn or glucose syrup. Heat over medium until it just begins to simmer and small bubbles form at the edge — do not boil.

Make ganache

Pour the hot cream over the chopped chocolate. Let sit undisturbed for 60 seconds to soften the chocolate, then gently stir from the center outward with a rubber spatula until smooth and glossy and all chocolate is melted. If needed, warm briefly over a double boiler, stirring constantly, until fully melted.

Finish ganache

Stir in 2 tbsp room-temperature butter, a pinch of fine sea salt, and 1 tsp chosen flavoring (vanilla or liqueur). Stir until incorporated and glossy. Taste and adjust salt or flavor carefully.

Chill and portion

Cover the ganache with plastic wrap placed directly on its surface to prevent skin. Chill in refrigerator until firm enough to pipe or scoop, about 1–2 hours. Once firm, use a small scoop or piping bag to portion ganache into roughly 1-tbsp (about 12–14 g) portions — yields about 30 truffles depending on size. Place portions on a parchment-lined tray and chill again until fully set, about 20–30 minutes.

Chocolate Shell / Tempered Coating

Temper chocolate (seeding method)

Chop 12 oz dark couverture finely and reserve. Place about two-thirds (8 oz) of the chocolate in a heatproof bowl. Melt gently over a double boiler (bowl set over simmering water, water not touching bowl) or in 20–30 second bursts in a microwave at 50% power, stirring between bursts, until chocolate reaches 45–48°C (113–118°F) for dark chocolate.

Seed and cool

Remove bowl from heat. Add the remaining 4 oz chopped chocolate to the melted chocolate and stir constantly until it cools to 30–31°C (86–88°F). Continue stirring until smooth and all seed pieces melt — this brings the chocolate into temper. If temperature drops below target, very briefly rewarm over the double boiler while stirring, keeping below 32–33°C.

Maintain working temperature

Keep tempered chocolate at 30–31°C (86–88°F) while enrobing. Work on one small batch at a time. If using a candy thermometer is not possible, tempered dark chocolate will be fluid, glossy and will begin to set within a few minutes at room temperature.

Prepare dipping station

Set up a tray lined with parchment, two forks or a dipping tool, a bench scraper, and the chilled ganache portions within easy reach. If decorating with white/milk chocolate, temper or melt the 2 oz and transfer to a small piping bag or squeeze bottle for later decoration.

Enrobe ganache centers

Using a fork or dipping tool, pick up a chilled ganache portion and lower it into the tempered chocolate. Tap the fork against the bowl edge and use a second fork or bench scraper to remove excess chocolate, leaving a thin, even shell. Transfer the coated chocolate to the prepared parchment. Work quickly but gently so the centers don't warm and leak. If shells are too thin or holes appear, scrape chocolate from the bottom of bowl and re-dip to reinforce seams.

Allow shells to set

Let the chocolates sit at cool room temperature (ideally 16–20°C / 60–68°F) until the shell becomes firm and glossy, about 10–20 minutes. If humidity or warmth prevents proper setting, chill briefly (2–3 minutes) but avoid condensation — place tray in the coolest part of refrigerator for very short time.

Finish & Decoration

Decorate

Before shells fully set tacky, decorate as desired: dust lightly with cocoa powder using a fine sieve, press a few cocoa nibs on top, apply a tiny piece of gold leaf, or pipe contrasting tempered white/milk chocolate in thin lines or dots. If using sea salt flakes, sprinkle just a few flakes on selected pieces while chocolate shell is still slightly tacky so they adhere.

Rest and stabilize

Allow decorated chocolates to rest undisturbed until fully set and firm to the touch, another 15–30 minutes depending on room temperature.

Store

Place chocolates in an airtight container in a single layer separated by parchment. Store in a cool, dry place away from strong odors at 15–18°C (59–64°F) for up to 2 weeks. For longer storage, keep refrigerated for up to 1 month but bring to room temperature before serving to regain best texture and flavor.
