In honor of Oktoberfest, this week's sausage special is a House Brat made with caraway, mårzen lager and spices. Served on toasted roll with onions, peppers and braised red cabbage on the side to pair with a classic bavarian beer! Prost!

Bratwurst Preparation

Make the Sausage Mixture

In a large mixing bowl, combine ground pork, ground beef, caraway seeds, mårzen lager, garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are fully incorporated.

Prepare the Casings

Rinse the hog casings under cold water and soak them in water for at least 30 minutes. This will make them more pliable for stuffing.

Stuff the Sausages

Using a sausage stuffer, fill the casings with the sausage mixture, taking care not to overstuff. Twist sausages into links about 6 inches long.

Cook the Bratwursts

Preheat a grill or skillet over medium heat. Cook the bratwursts for about 15-20 minutes, turning occasionally, until browned and cooked through.
